Instant Healthy Coffee Latte | Vegan, 3 Ingredients

Hey honeybees! Today on the blog and youtube I’m sharing a simplified version of my life changing latte — it’s only 3 ingredients and it takes barely a minute to make. It’s composed of coffee, nut butter and 1 date. And it froths up like a dream in the blender. The cashew butter combines with the hot coffee to make instant nut milk — and the date gives it just a touch a caramel sweetness. Make it and tell me you don’t feel like a genius afterwards! I know I always do.

I make some variation of this latte almost every day. It’s become a staple of my self-care routine. Not just because it’s easy and delicious (check and check). But because it’s so easy to add in functional herbs and powders. I’ll usually add in a scoop of hydrolyzed collagen powder (not vegan) which provides protein and is great for joint, connective tissue and GI health. Or I’ll add maca, functional mushroom powders (reishi, cordyceps, chaga) or blends that I love (check out my favorites here).

You can make this latte with any nut butter or sweetener you like, and of course you could add spices or super herbs to your hearts content. I sometimes make it with almond butter, and I’ve even tried it with tahini and sunflower butter. So nutty, so good!

Instant Healthy Coffee Latte

3 ingredients, under 5 minutes and made in a blender! It doesn’t get easier than this when it comes to lattes. Note: you can sub hot brewed coffee for herbal coffee.

Prep time 5 mins · Makes 1 large serving or two smaller servings


  • 1 1/2 cups hot brewed coffee OR herbal coffee / tea

  • 1 tbsp cashew butter (or a little more for extra creaminess)

  • 1 medjool date, pitted


  1. Brew your coffee as you normally would.

  2. Blend all ingredients together in a high powered blender: hot brewed coffee, cashew butter, and dates. Blend for 1 minute or until the dates are liquified. Serve hot.
