Blueberry Banana Smoothie Bowl with Coconut Milk + Smoothie Sundays
Recent realization: the desire to eat something different at every meal is not universal.
Also, thinking about ways to turn raw coconut into various vegan meat-stuffs while silently gazing off into the distance at a river-party is atypical.
I recently bought this book and was shocked that Logan found it both weird and boring. There are all sorts of dancing hot dogs / birds with boobs in there, idk what's boring about that!
But, I also get personally offended when people don't understand why I categorize them by the Hogwarts house I think suits them best (whispering *such a Ravenclaw* under my breath).
At this point in my life I've accepted that my brain is basically a fruit-salad composed of the following ingredients.
1 cup poetry
1/4 cup yoga poses that look like bavarian pretzels
1/8 cup coconut oil
1 scant tablespoon "hugging immediately after introducing myself to you"
1 quart trying to explain what being a professional food blogger means
1 cup "hey logan what do you want for dinner jk i just want to make out"
2 teaspoons subconsciously planning new vegan mac n cheese recipes
1 box of avocados 1 VW bus full of avocados
1 bushel hand dyed indigo linen hand towels (in my online shopping cart at Anthro)
1 gallon downplaying my own achievements to make other people feel good (I know that's not how it works though)
4 ounces avoiding having to learn how to make gluten free bread
1 cup chemex brewed coffee no more no less
handful fresh basil from my garden
dash getting miffed at being called "granola" while I'm eating granola
pinch stalking other food bloggers instagram feeds for inspiration
*optional garnish: snapping food in ugly light, solo kitchen dance party, oregano blossoms
I like to think my days are a good mix of both prose and jokes. Insightful wanders in the early hours of the day while wearing stretchy pants and holding a mug of coffee from home. 10 minutes of meditation after slogging through my yoga practice. Eating a bowl full of raw tomatoes with vegan chipotle mayo at 11 am while pinning images of tahini rose marzipan matcha quadruple layer bundt pizzas.
Then crying over Dallas. Then writing a song about the limitless nature of the human spirit. Then responding to sponsorship inquiries with "Oh hai thanks like so much for reaching out like I'm SOOOOOO jazzed you contacted me but I don't work for free LOL LETS BE FRIENDS." Then watching an hour of The Young Turks because I don't know what news sources to trust anymore. Then, you know, actually doing work.
Pancake batter days flecked with mundane beauty and enlightened idiocy.
You know what happens to be the pinnacle of beautiful, basic, dumb perfection? Smoothie bowls. There's something childlike about smoothie bowls. What I'm trying to say is that my inner child (waving a sparkly wand, wearing a tutu and clutching a fantasy novel) is delighted by them! And, surprisingly, I have yet to be bored of pouring thick, instant fruit sorbets into bowls and arranging foods with contrasting colors on top of them. Green slush plus goji berries. Yellow slush plus blueberries. Purple slush plus pistachio bits.
I figure Sundays are a good time to share some of the smoothie bowls I throw together throughout the week. So I've decided this is going to be a series! I might not always post these on Sundays. I'll try but I suck at posting things on exactly the same day.
This Blueberry Banana Smoothie Bowl is a riff on the blackberry maca smoothie I posted a couple of weeks ago. It's super simple with an emphasis on bee pollen. If you don't dig the flavor of bee pollen (which is sort of like honey combined with chalk) you might consider lessening the quantity to your liking. But bee pollen is one of those foods that turns you into an alchemist. So if you're thinking about skipping it maybe reconsider?
My Blueberry Banana Smoothie Bowl is simple, creamy like frozen yogurt, sweet and chock-full-o-blueberries! Just add everything to your blender, whizz and top with fruit, nuts, etc. as you please. I've been topping mine with pistachios and fresh blueberries (I got the ones pictured from our farmers market last week). But I've been known to add edible flowers, sliced fruit, puffed millet or crisped brown rice cereal, buckwheat groats, cacao nibs and all manner of chewy dried fruits on top. Go crazy!

But I've always been pro pollinator-friendly consumption of honey as well, even when I was hardcore vegan.

Blueberry Banana Smoothie Bowl with Coconut Milk

Thick and creamy like soft-serve FroYo this smoothie bowl is a crowd-pleaser!
- Prep Time: 5m
- Serves: 1
- 1 frozen banana
- 1 1/2 cups frozen blueberries (I use wild blueberries)
- 1 cup coconut water (reserved from a can of chilled coconut milk)
- 2 tablespoons full fat coconut cream
- 2 tablespoons bee pollen (more or less to your liking)
- 1 tablespoon maca powder
- toppings: chopped pistachios, fresh blueberries & blackberries
- Combine all of the ingredients except for the toppings in a high powered blender and whizz until everything is smooth and creamy.
- Pour into your favorite bowl. Add toppings as you like!
